Brinjal and Drumstick Sambar

Ingredients:

1. Drumstick – 5 to 6
2. Brinjal – 2 to 3
3. Toor dal – 1/4 cup
4. Coconut gratings – 1 cup
5. Onions – 1 (Optional)

For Masala:

1. Coriander seeds – 2 tsp
2. Black gram dal – 1 tsp
3. Jeera – 1/2 tsp
4. Methi seeds – 1/4 tsp(About 7 – 8 seeds)
5. Red chilies – 3 to 4
6. Asafetida(Hing) – little bit

Fry all these together in a medium flame till black gram dal(Urad dal) becomes light brown. Add 5-6 curry leaves and fry a little.

Method:

Cut Drumstick in to 2 to 3 pieces. Cut Brinjal in to small pieces. Cook toor dal till soft in a cooker. Now cook drumsticks in a vessel. Add about 2 cups of water, 2 tsp of salt and Jaggery. When drumsticks are 3/4 cooked add Brinjal pieces, because brinjal cooks very fast and cook it well. After that add cooked toor daal to this and keep aside.

Now grind coconut gratings, tamarind and fried masala with water to a fine paste, add this to the cooked vegetables. Add some more salt about 1 tsp and some more water if needed and boil this well. Garnish with curry leaves.
