Ladies finger curry

Ingredients:

1. Ladies finger - 250 gms
2. Tamarind - A small piece
3. Jaggery - A small piece

For seasoning :

1. Mustard seeds - 1tsp
2. Black gram dal - 1 tsp
3. Red chilly - 1 cut in to 2 pieces

For Masala :

1. Coconut gratings - 1/2 cup
2. Mustered seeds - 1/2 tsp
3. Red chilies - 2
4. Grind these without water.

Method:

Prepare tamarind juice in 1/2 cup water. Wash Ladies finger and cut it in to round pieces. Heat a pan with 2 tsp of oil and add mustered seeds, black gram dal, red chilly pieces. When mustard sputters add curry leaves and Ladies finger pieces. Fry it well for about 2 minutes. Now add salt, Jaggery, tamarind juice and some more water if required. Cover the pan and cook it well, till the Ladies finger pieces becomes soft. Now add the masala, mix it and fry for 2 minutes.

Note:
1. You can add either the masala powder given in Brinjal Curry or the above given ground masala.
2. When you make the masala powders of rasam and curry, you can prepare in more quantity and keep it in a airtight container. It can be used whenever you prepare rasam and curry.
