Brinjal Curry

Ingredients:

1. Brinjal – 250 gms
2. Tamarind – A small piece
3. Jaggery – A small piece

For seasioning :

1. Mustard seeds – 1tsp
2. Black gram daal – 1 tsp
3. Red chilly – 1 cut in to 2 pieces

For Masala :

1. Corriender seeds – 1 tsp
2. Black gram dal – 1 tsp
3. Cumin(Jeera) – 1/2 tsp
4. Red chilies – 4 to 5
5. Asafoitida(Hing) and Curry leaves
6. Fry all these with 1 tsp of oil and fry it.

Method:
Take small green brinjals, wash and cut in to 4 to 6 long pieces and put it in water for 10 minutes. Prepare tamarind juice in 1/2 cup water. Heat a pan with 2 tsp of oil and add mustered seeds, black gram dal, red chilly pieces. When mustard sputters add curry leaves, brinjal pieces, salt, Jaggery and fry for some time. Now add the tamarind juice. Cover the pan and cook in a medium flame, till the brinjal pieces becomes soft. Now add masala powder, mix it and fry for 2 minutes.
