Vegetable Pulav
Ingredients:
1. Vegetables: Potato, Beans, Carrot – 600 gm
2. Rice – 2 cups
3. Green piece – 50 gm
4. Cloves(Lavanga) – 7 to 8
5. Cardamom(Elachi) – 1
6. Cinnamon(Dalchini) – 3 pieces of 1 inch
7. Pepper – 3 to 4
8. Coriander leaves – 1/2 bunch
9. Onions – 3 to 4
10. Green chilly – 2
11. Tomatoes – 2
12. Garlic – 7 flakes
13. Ginger – small piece
Method:
1. Cut Vegetables, Onion, Tomatoes and keep aside.
2. Grind green chillies, garlic, ginger, cloves, cardamom, pepper, Cinnamon, 1/2 of a onion, Coriander leaves(1/2 cup) in a mixer grinder in to a fine paste without adding water.
3. In a presser cooker heat about 3 tsp of ghee or oil.
4. Add onion pieces and fry till it becomes light brown.
5. Add the prepared paste and fry well in slow flame for 7 to 8 minutes.
6. Add tomatoes and fry well.
7. Add vegetables and fry for 2 to 3 minutes.
8. Add washed rice and fry for 2 minutes. Add water around double than the rice.
9. Add the remaining cut coriander leaves(1/2 cup). Add 2tsp of salt.
10. Cook it well. Serve hot with tomato raita.
