Lemon Rice

Ingredients:
1. Rice – 1 cup
2. Lemon – 2 medium size
3. Turmeric powder – 1/2 tsp
4. Green chillies – 3 to 4
5. Grated fresh coconut – 2 Tbl. sp. (Optional)
6. Coriander leaves and curry leaves
For seasoning:
1. Mustard seeds – 1/2 tsp.
2. Black gram dhal – 1 tsp.
3. Bengal gram dhal – 1 tsp.
4. Broken cashew nuts – 2 tsp.
5. Curry leaves – few
Method: Cook rice and allow it to cool in a broad basin. Add turmeric powder on top of rice when it is still hot. Heat oil, fry the seasonings, green chillies and fry for a minute. Pour over cooled rice with enough salt. Squeeze lemon juice and mix well. Garnish with coconut and coriander lees.
