Ridge Gourd (Herekayi) skin Chutney – 1

Ingradients:

1. Skin of one Ridge Gourd
2. Urad dal – 3 tsp
3. Coriander seeds – 1/2 tsp
4. Red challis – 3 to 4
5. Curry leaves – 2 Strips
6. Hing – 1 pinch
7. Tamarind – A small lemon size
8. Coconut gratings – 3 to 4 spoon

Method:

Cook the skin of a Ridge Gourd with some water, fry masala – Urad dal, Coriander seeds, Red chilies, till Urad dal becomes golden brown.
Now add hing and curry leaves, fry a little and keep aside. Grind fried masala, coconut gratings, cooked Ridge Gourd skin, tamarind and salt. You can add the water used for baking Ridge Gourd.

Note:This chutney will be very tasty with Rrice Idly or Chapatti.
